Tzatziki Time!

I did a Facebook live the other day on how to make tzatziki and wanted to share the recipe in written form because it wouldn't be very nice of me to make you watch this whole video every time you had a hankering for some good tzatziki now would it?

 

1 1/2 cups plain Greek yogurt

1 medium cucumber

1 Tbs olive oil

2 teaspoon fresh lemon juice

2 tsp-1Tbs (your choice) fresh chopped dill

1/4 cup crumbled feta

Fresh ground pepper & a pinch of sea salt to taste

Put yogurt in a medium bowl.  Peal cucumber if desired (see video for my hang up with waxy cucumbers).  Cut  in half lengthwise and scoop out the seeds (or use an English or Hot House cucumber aka seedless).  Roughly chop and put in the food processor until fully broken down.  Place cucumber "pulp" (if you will) in a clean kitchen towel and wring out all of the water (do in two batches if necessary).  

Add cucumber, olive oil, lemon juice, dill, feta, salt and pepper to the bowl.  Mix to combine and refrigerate for at least an hour or two before serving (to get the most bang for your buck!).
